A Commis Chef provides all meals, snacks and refreshments to the employees. He/she communicates to the cooks what orders to fill. A Commis Chef also prepares various dishes like pasta, bread, gravy, soup, etc. In addition he also keeps a check on the inventory.

Commis Chef Responsibilities

  • Train and manage culinary staff, including hiring, scheduling, and firing
  • Perform routine duties including preparing food items according to recipes, using specialized kitchen equipment, and measuring ingredients
  • Constantly monitor and communicate with staff to ensure product quality, timeliness, and service, including updating and enforcing policies, procedures, and standards
  • Contact vendors to purchase or special order kitchen equipment, supplies, or food products
  • Supervise the preparation and presentation of all food items according to recipes and quality standards, including maintaining inventories, ordering food product, maintaining freezers and coolers, and performing daily and weekly food cost analysis
  • Maintain clean, fully stocked and easily accessible kitchen, including equipment and utensils
  • Maintain a clean, wellstocked, and easily accessible bar, including equipment and supplies
  • Conduct daily and weekly food cost analysis

Commis Chef  Skills Needed

  • Bachelor’s degree in culinary arts or related field
  • 2+ years of experience as a commis chef
  • Experience preparing breakfast, lunch, and dinner meals
  • Ability to prepare complex recipes
  • Knowledge of portion control, knife and kitchen safety, and sanitation procedures
